Garbanzo and Peanut salad

Drain 1 can of Chickpeas and rinse the heck out of it to get rid of the 'canned' flavor.  Set aside for the nonce.

Use a mortar and pestle to mush together

1/4 tsp salt
1 heaping tbsp smooth peanut butter
2 tbsp olive oil
1 tsp sambal oelek
into a smooth paste.k)
Add the juice of 1 large lemon and keep mushing till its all smooth again.
Add 1/4 cup roasted unsalted peanuts, and stir in.
This is your peanut sauce.

Microwave 2 cups frozen spinach on high for 2 minutes.  When done, mix in 1/2 tsp samba oelek, 1/4 tsp salt, 1/4 tsp ginger paste, and 1 tbsp peanut sauce (from above).  

Mix the remaining peanut sauce with the rinsed chickpeas and put in a bowl.
Place the spinach on top of the chickpeas.
Top with Ricotta, and a few of the roasted unsalted peanuts
Top yet again with your favorite chili sauce.

Notes

  • The spinach has the texture of creamed spinach, but is way tastier, and a lot better for you :-)
